Mango Almond Cobbler Recipe

Mango season is upon us and I'm sharing the best mango cobbler recipe ever! I absolutely love eating mangoes fresh, just as they are, but trust me this recipe is worth the effort. Especially, once there are so many mangoes you don't know what to do....đŸ„­đŸ„­đŸ„­đŸ„­
Mango Almond Cobbler Recipe:

4 cups peeled, pitted mango cut into large cubes.
1 lemon juiced
2 TBS brown sugar
1/2 TSP Almond extract
Toss together in a bowl and set aside

Topping ingredients: 
7 or 8 oz. of almond paste. Comes packed in a box in the baking aisle. Odense or Solo brand are easy to find. This is a key ingredient, so please don't omit.
1/3 cup sugar
1 stick of butter (1/2 cup) room temperature 
1 large egg
1/2 teaspoon almond extract 
1 cup flour
1œ TSP baking powder 
1/2 TSP salt
1/2 cup milk
Heat oven to 350 degrees. Pour tossed mango, lemon juice, brown sugar, and almond extract into a baking dish. I usually use an 8×8 square or 9 in round, deep dish pie plate.
Make the topping by using your fingertips and the sugar to break the almond paste in to small bits. You will be using an electric mixer but the paste needs to be broken down a bit before.
Next, beat in the softened butter, egg and almond extract into the almond paste and sugar.
Whisk the dry ingredients together in separate bowl, flour, salt, and baking powder. 
Beat in half of the dry ingredients into the almond paste mixture, then mix in the milk, now add the remaining dry ingredients. 
Spoon the topping over the mango and spread evenly over the top. Bake for 45 minutes and topping should be golden. Let me know if you try it!
